How to Make Five-Color Sticky Rice
Five-color sticky rice, known as “xôi ngũ sắc” in Vietnamese, is a visually stunning and delicious traditional dish. Making it involves several steps, from preparing the glutinous rice to coloring and steaming it.
Firstly, you need to soak the glutinous rice. Typically, the rice is soaked in water for at least 4-6 hours, or even overnight. This helps the rice absorb water evenly, ensuring it cooks to a soft and chewy texture. After soaking, drain the rice thoroughly.
Next, prepare the natural coloring agents. For the five colors, common choices include: pandan leaves for green, butterfly pea flowers for blue/purple, turmeric for yellow, beetroot for red, and red sticky rice itself or dragon fruit for pink. The leaves or flowers are usually boiled in a small amount of water to extract their color. This colored water will then be used to dye the rice.
Divide the drained glutinous rice into five equal portions. In separate bowls, mix each portion of rice with one of the prepared natural colorings. Ensure the rice is evenly coated with the color. Let the rice sit for about 30 minutes to absorb the color.
While the rice is absorbing the color, prepare the steamer. You can use a traditional bamboo steamer or a modern steamer. It’s important to line the steamer with a cloth or banana leaves to prevent the rice from sticking and to add a subtle aroma.
Once the rice has absorbed the colors, steam each color separately or layer them carefully in the steamer. Steaming time usually takes around 20-30 minutes, depending on the amount of rice. Make sure the rice is cooked through and tender.
Finally, arrange the steamed colored rice onto a plate. Traditionally, the colors are arranged in a pattern to create a beautiful “five-color” effect. This dish is often served as a festive meal or a special offering.
This detailed process ensures that the xôi ngũ sắc is not only flavorful but also a feast for the eyes.
